Halfway There!!

How far along? 20 weeks. HALFWAY!!!
Total weight gain/loss: 11 pounds gained.
Maternity clothes? I went shopping at A Pea in the Pod last week! I got 4 shirts, 2 pants, and jean shorts. I obviously can’t do the pants right now but figured I’ll need them once I’m huge and the weather cools down!
Stretch marks? Nope!
Sleep: Yes. Although Turner is wide awake as I’m falling asleep and when I wake up at 6am and am trying to fall BACK to sleep… He’s warming me up for motherhood I suppose!
Best moment this week: Seeing Turner on the big screen! He got all measured and is looking good!
Miss Anything? Same old…
Movement: Yes! Stew felt him from the outside last week! He was so excited.
Food cravings: No. I’m definitely filling up on good foods for our boy! I actually switched from my Edy’s frozen yogurt (full of sugar) to this incredible Atlanta Fresh Greek Frozen Yogurt, that’s actually yogurt! They sell it at our Whole Foods and I adore the Karma Java. I actually eat their plain greek yogurt during the day too. Love!
Anything making you queasy or sick: Nope!
Have you started to show yet: Absolutely.
Gender: BOY!!!
Labor Signs: No
Belly Button in or out? In
Wedding rings on or off? On
Happy or Moody most of the time: Happy!
Looking forward to: Putting up the crown moulding in Turner’s room and starting to decorate!
Side Notes: I added this so I can keep track of random ideas that pop into my head. So I’m exhausted. I don’t know who’s genius idea it was to tell me that I’d feel like Superwoman in the second trimester… they lied.

I had headaches for about a week and then started going to the chiropractor a few months ago and I’m healed! I haven’t had a single headache since. It’s glorious!  She also showed me how to massage the round ligaments (don’t feel bad I didn’t know what the heck these were either) so they don’t hurt as I grow. So far so good!

Sweet Potato Steak Fries

We’ve gotten some delicious produce from our CSA bag so far this season. We’ve been getting tons of corn lately! So we decided to make turkey burgers with grilled corn for dinner one night. I wanted to get something that would spice it up though. Stew’s been wanted sweet potatoes for a while now. So I decided that I’d make some sweet potato fries to go with our burgers. They were perfect! They provided a nice sweet bite to contrast the spicy burgers and juicy corn.

Cut sweet potatoes in half lengthwise. Quarter each half so you have 8 fries per potato. Arrange the potatoes on two pans so there’s enough room for them to cook. Pour 2 Tbsp of olive oil over potatoes on each pan. Sprinkle 1/2 tsp salt, 1/2 tsp pepper, and 1 Tbsp brown sugar over potatoes on each pan. Mix everything together with your hands, ensuring that each spear is completely coated with oil and spices. Lay potatoes cut side down.

Bake for 30 minutes. Flip halfway through cooking time. Once they’re golden and fork tender, they’re ready!

Sweet Potato Steak Fries-serves 4

3 sweet potatoes

4 Tbsp olive oil

1 tsp salt

1 tsp pepper

2 Tbsp brown sugar

Choose potatoes that are on the thinner side. Preheat oven to 425 degrees F.

19 Weeks

How far along? 19 weeks.
Total weight gain/loss: 10 pounds gained.
Maternity clothes? That’s actually a maternity top! But don’t get excited, those are my shorts, just using the rubber band trick. Honestly, I’m trying to avoid maternity clothes as long as possible (unless Francesca’s ever created a maternity line… I digress).
Stretch marks? Nope! Although I read today that 90% of women get them. Yikes! Hope my cocoa butter works ; )
Sleep: Like a rock, except for last night when I had some crazy dreams (I won’t fill you in) and then couldn’t fall back to sleep. I made up for it today with a nap!
Best moment this week: feeling Little Man kick like crazy while we watched Lord of the Rings! He seems to like when I eat eggs and when I am about to go to sleep.
Miss Anything? Have I mentioned coffee? Although I’ve been missing turkey sandwiches too! I tried heating it up one day… not worth it. I’ll wait 4 months for a good turkey sandwich!
Movement: Definitely! I can’t wait for Stew to feel him!
Food cravings: I’m not really craving things as much as enjoying fresh fruits like berries and peaches. So far, I’ve never been like “I need  (fill in the blank) right now!” I’m thankful for that.
Anything making you queasy or sick: Nope!
Have you started to show yet: Finally! This woman at the grocery store yesterday said, “you got a bun in the oven?” and I was like “THANK YOU FOR NOTICING!” I think I finally look pregnant!
Gender: BOY!!!
Labor Signs: No
Belly Button in or out? In
Wedding rings on or off? On
Happy or Moody most of the time: Happy!
Looking forward to: My ultrasound tomorrow! He’s grown so much since the last time we saw him!

Garlic Pickles

I have gotten more dill and cucumbers from my CSA than I  can physically eat in a week. So, I made pickles! These are spicy and delicious. They’re so easy to make, it’s laughable! Bring them to your 4th of July barbecue and the guests will go crazy! You’ll be a rock star for sure!

GARLIC PICKLES

INGREDIENTS

  • 3-4 Pickling Cucumbers sliced
  • 6 Fresh Dill Sprigs
  • 4 Clove Garlic crushed
  • 1/2 Cup Distilled White Vinegar
  • 1 1/2 Cup Water
  • 1 Tbs Salt
  • 1/2 Tsp Sugar
  • 1/2 Tsp Hot Pepper Flakes
  • 2 Tsp celery seeds
  • 1 Tsp Peppercorns
  • 2 12 oz. mason jars

DIRECTIONS

Mix water, vinegar, salt and sugar together in a pourable container. Microwave mixture, about 45 seconds, until salt and sugar are dissolved. Arrange Dill sprigs and cucumbers in two canning jars. Then drop 2 cloves garlic cloves in each, sprinkle spices evenly into jars, add the water and vinegar mixture until jar is filled to rim. Put the lid on the jar and give it all a good shake. Refrigerate. Give it a taste test after 24 hours. If there are any left after 48 hours give them another taste, they will continue to pickle as they sit.
