Goodies

Stew and I are starting the nursery… too soon? I know I know. But if you know me, you know I’m an overachiever (ex-teacher) who likes things done yesterday. SO, we started. I just can’t help myself! Now that the first trimester’s over and I’m getting my energy back, I am so excited! We haven’t painted or anything but I did find some goodies! We picked up a crib (couldn’t resist) the other day that was exactly what I wanted. Then I found this old rickety dresser from the Habitat store for $25!!!  Here is the before…I sanded it and painted it and switched out the knobs.

This will be the changing table!

I already had a little table and armoire that will go perfectly in the room. I’ll have to wait to buy other things until I find out if it’s a boy or girl! I know I will get to register so I won’t go crazy, but it’s hard to resist great finds!

Chocolate Frozen Yogurt

I came home for lunch the other day, and I was starving but didn’t know what to eat. This happens a lot lately! So I saw that I had an avocado that was starting to look pretty sorry….Avocado salad? No. Guacamole? No. Then I got to thinking that I really wanted ice cream. This brought me to my frozen yogurt concoction! I just threw all of the ingredients into my food processor, not knowing what to expect. And I was pleasantly surprised! I sat on the porch and ate my delicious lunch feeling quite pleased with myself that I was eating “frozen yogurt” for lunch without an ounce of guilt!

Chocolate Frozen Yogurt

1 cup frozen bananas

1/2 ripe avocado

2 tsp peanut butter

1 Tbsp coco powder

1 tsp agave nectar

2 Tbsp almond milk

Combine all ingredients, except almond milk, in a food processor. Pulse a few times to break up the bananas. Scrape down the sides with a spatula. Turn the food processor on, and slowly pour almond milk through the feed tube. You may not need all of it, so go slow. Stop occasionally to scrape down the sides. Continue to pulse until the mixture is smooth like a frozen yogurt. Serve immediately.

Today Was Life Changing!

Stew and I went to our 12 week check up with our midwife today. Usually they don’t do an ultrasound at a birth center until 21 weeks. There’s really no need until then. So we were planning on going in and just hearing the heartbeat. She was having trouble finding the heartbeat (I don’t think I’m quite big enough yet for the machine she was using) so she flipped on the ultrasound screen to see if we could find the little peanut…OH MY GOSH!! After a few seconds she found it. The baby was lying on its back with its legs in the air flailing about like a little jumping bean! Seeing that was even better than hearing the heartbeat!! Now it feels real. I can’t believe there’s a little person in there! Now it just needs to grow! Stew and I couldn’t stop smiling. We were so excited all day! I can’t wait to meet this munchkin!

Chicken Bok Choy Stir-Fry

I am constantly testing new recipes for stir-fry. It’s one of those dishes that uses so many veggies and has endless variations. This week in my CSA bag, I got two lovely heads of bok choy. I figured a stir-fry was perfect for this. I really love the CSA produce. You can’t buy produce that fresh in the store. So I wanted to make a simple stir-fry that really let the bok choy shine. I just used chicken, bok choy, and red pepper.

In a small bowl, whisk together ingredients for the sauce and set aside. Heat a wok on medium heat. Saute garlic and ginger for about a minute. At this point, bring a large pot of water to boil so it’s ready for the soba noodles. Add the chicken to the wok and cook until no longer pink in the middle, about 7 minutes. Remove the chicken from the pan and add the bok choy along with half the sauce. Cook about 5 minutes until the bok choy starts wilting down. In the meantime, boil soba noodles for 3 minutes. While the noodles cook, add the chicken, pepper, and remaining sauce to the wok. Once noodles are done, use your tongs to lift the noodles out of the water and place directly into the wok. Stir all the ingredients together and cook for about 2 more minutes so the flavors combine. Serve topped with toasted sesame seeds. Enjoy!

Chicken Bok Choy Stir-Fry

Sauce:

2 Tbsp soy sauce

1 Tbsp honey

1 Tbsp apricot marmalade

2 Tbsp sesame oil (divided)

1 tsp chili garlic sauce

Stir-Fry:

1 clove garlic, minced

1 inch piece ginger, skin removed and minced

2 boneless skinless chicken breasts, cut into chunks

1 large head bok choy (or 2 small)

1 red bell pepper, large dice

1 bundle buckwheat soba noodles

Toasted sesame seeds

In a small bowl, whisk together ingredients for the sauce and set aside. Heat a wok on medium heat. Saute garlic and ginger for about a minute. At this point, bring a large pot of water to boil so it’s ready for the soba noodles. Add the chicken to the wok and cook until no longer pink in the middle, about 7 minutes. Remove the chicken from the pan and add the bok choy along with half the sauce. Cook about 5 minutes until the bok choy starts wilting down. In the meantime, boil soba noodles for 3 minutes.
